The Rabbitry

      Americans do not eat much rabbit anymore.  We used to.  In the 1930's and 40's one rabbit producer in our valley would deliver 600 rabbits to Las Vegas weekly.  Today we only find rabbit on the menu of fine restaurants.  Throughout Europe rabbit is still a staple meat.  Family members of ours now living in Paris purchase a rabbit weekly at their Farmers Market.  Ahhh, to be able to purchase local meats at your nearest Farmers Market!  There is USDA bureaucracy for you:(    Rabbit meat is delicious and tender when cooked properly.  We prefer raising them way more than we do chicken!
